* 4 Constantinos Codfish Heads
* 1,2kg of Potatoes
* 1,5dl of Olive oil
* 2 Onions (big)
* 4 Tomatoes
* 2 Garlic cloves
* 3 Soup spoons of tomato concentrate
* 2 Bay leaves
* ½ Green pepper
* ½ Red pepper
* 3dl of Water
* Salt and parsley to taste
Scald the tomatoes, remove the skin and chop them into little pieces. Wash the peppers, remove the seeds and the white filaments and cut them into strips. Cut each codfish head in 4 pieces. Peel the onions and the potatoes and cut them into round slices. Peel the garlic and smash the cloves.
In a large pan, put the olive oil, the smashed garlic and the bay leaves and let it braise. Put the onion, the codfish heads and the potatoes into layers. Add the cut tomatoes and the tomato concentrate. Add the water and salt. Let it cook, in slow fire with the pan covered for 15 minutes. Add the peppers and the parsley. Cover the pan again and let it cook for about 20 minutes, stirring occasionally and put more water if you need to.
When the potatoes are ready, serve the stew.
